An exceptional coffee from Colombia, specifically from the Huila region, sourced from the Las Flores farm. The farm's owner, Nestor Lasso, is known for his extraordinary dedication and unconventional approach to coffee processing. The innovative methods he employs allow for the extraction of unique flavor profiles.
The caffeine has been removed using the patented Swiss Water method, developed by the Canadian company Swiss Water. This method is exceptional because it uses no chemical solvents. Only water is used in the decaffeination process, preserving the full aromas and flavors of the coffee. Our coffee is fully certified and bears the official Swiss Water Decaf logo.
Before decaffeination, the coffee underwent innovative treatments: first, the coffee cherries were subjected to very low temperatures (thermal shock); subsequently, the coffee was thoroughly washed and fermented under anaerobic conditions.
