Welcome to our Laboratorio de Café!

We are Sylwia and Lukasz. We are a couple united for years by our passion for specialty coffee and by the desire to showcase it with depth and respect for its entire journey: from the plantation to the cup.

Our story

Our adventure with coffee began many years ago.

Little by little, we learned about different roasting methods, the history of coffee, and its cultivation and processing techniques. For a long time, we were "just" conscious and passionate consumers, trying beans from all over the world. The turning point came in 2021.

A spontaneous trip to Panama

The pandemic meant we stayed there longer than planned. Today we know it had to be that way. We arrived in the Boquete region, in the province of Chiriquí, known for producing some of the best Arabica coffees in the world, including the legendary Geisha variety, which fetches record prices at auctions. There we saw coffee from the inside for the first time: we met the producers, visited farms, and learned about the enormous importance of cultivation, processing, and patience.

Over time we stopped being just observers.

We stayed longer in Panama and then - along with our five cats - returned with a concrete plan: to create our own coffee shop and roastery. For four years, in the Bocas del Toro archipelago, we worked with coffee producers in the Chiriquí region, roasting coffee and deepening our knowledge of beans, fermentation, roasting profiles, and how to extract the best from coffee every day. We know how much dedication and heart goes into each good batch of beans, and we deeply respect that.

In 2025 we made another important decision.

We sold our business in Panama and moved to Spain to develop the Laboratorio de Café. Here - in inspiring Andalusia - we want to continue our journey, sharing our experience, knowledge, and carefully selected specialty coffee. We'd be happy to show you the real story behind every package.

We see coffee as a space for discovery and creation. We explore roast profiles, brewing methods, and flavor combinations with curiosity and joy. We encourage you to try, ask questions, and learn from "coffee mistakes": coffee should stimulate the senses and bring pleasure, not complicate things.
